Chef's Home-made Soup, served with a warm crusty roll Orkney Seafood Chowder: A selection of Orkney fish and shellfish cooked in a creamy soup Steamed Shetland Mussels Hamnavoe: Mussels cooked with smoked bacon, leeks, garlic finished with a white wine and cream sauce.
Orkney Smoked Salmon and Mackerel parcels served with mustard and dill dressing.
Smoked bacon and Grimbister Cheese Risotto: a Arborio rice Orkney Grimbister Cheese, lardons butter and a touch of cream.
Timbale of Haggis: Served with crispy onions and a Highland Park whisky sauce Roast Brest of Wood Pigeon: Served on a bed of pickled red cabbage with a redcurrant jelly and red wine jus.
Smoked Haddock Terrine: Served with a beetroot and lime salsa.
Mushroom and oatmeal patties: Served on a leek and hazelnut fricassee
MAINS
Roast Loin of Monkfish: Wrapped smoked bacon on a bed of tarragon mash, served with a Madagascar green peppercorn sauce.
King Orkney Scallops: Set on a bed of black pudding mash and served with a cointreau cream.
Fillet of Sea-bass: Char grilled, served with a pea puree, smoked bacon and a lime butter sauce.
Baked Orkney Fillet of Salmon: Set on a bed of roasted peppers and drizzled with a elderflower scented oil Orkney Spicy Fish Casserole: Selection of Orkney and Shetland seafood cooked in a rich tomato & green herbs with a touch of chilli Loin of Highland Venison: Cooked pink and served with a sloe gin and bramble jus.
Breast of Lothian Chicken: Stuffed with Grimbister cheese and served with a leek and honey sauce.
Deep-fried Goats Cheese: In golden bread crumbs and herbs set on a bed of seasonal leaves with a walnut and onion chutney.
